Откуда оно
Caelum is a small family estate that began in 2009 as a grape grower. After more than a decade working the vineyard, the family – trained in agronomy, oenology, sommellerie and engineering – decided to complete the cycle and make their own wine. The name comes from a southern-hemisphere constellation depicting a chisel, their image for handcraft. All the fruit comes from their own vineyard in Agrelo, part of Luján de Cuyo just south of Mendoza city, the long-established heartland where Argentina's reputation for Malbec was built, at the foot of the Andes. Soils are clay and limestone over a stony subsoil. The blend is unusual: half Montepulciano, an Italian variety, rounded out with Cabernet Sauvignon, Malbec, Petit Syrah and Cabernet Franc. Only around 2,000 bottles are made each year.
Hand-selected bunches, partly destemmed and partly whole-cluster, each variety fermented and macerated separately for 25 days in open barrels at 25–30 °C, malolactic in barrel, then 20 months in French oak with regular bâtonnage.
