Where it comes from
Caelum is a small constellation of the southern sky that depicts a sculptor's chisel; the winery took the name because, for them, their own hands play that role. This Chardonnay comes from Agrelo, part of Luján de Cuyo, the classic wine district just south of the city of Mendoza. The vines were planted in 2009 at 1,000 metres at the foot of the Andes, on clay with stones, where the dry mountain climate and cool nights help the grapes hold on to their acidity. Picking and sorting are done by hand, malolactic fermentation is deliberately prevented and the wine never touches oak, so fruit and freshness take the place of butter and vanilla. Around 4,000 bottles are made each year.
Hand-sorted clusters pressed whole, cold settling of the must, no malolactic fermentation, about six months in stainless steel, then fined and filtered.

Serve at 10–11 °C in a white wine glass.
