Where it comes from
Caelum is a small constellation visible from the southern hemisphere. It depicts a chisel, the sculptor's tool, and the winery sees its own hands playing the same role in the cellar. The grapes come from estate vines in Agrelo, part of Luján de Cuyo, the historic core of Mendoza just south of the city. The vineyards sit around 1,000 metres above sea level at the foot of the Andes. Dry air, strong daytime sun and cool nights there give ripe fruit that keeps its freshness. Malbec came from south-west France, but it was in Mendoza that it found its real home and became Argentina's signature grape. These vines were planted in 2000 and are picked by hand. The wine never sees oak, so what reaches the glass is the fruit and the place.
Hand-harvested, cold-macerated and fermented with indigenous yeasts in stainless steel, then aged for about six months in steel tanks, with no oak.
