De dónde viene
Caelum is a small constellation of the southern sky that depicts a chisel, the sculptor's tool. The winery chose the name because its own tool is the human hand: grapes are picked and sorted by hand. The vineyard is in Agrelo, a district of Luján de Cuyo just south of the city of Mendoza and one of the historic heartlands of Argentine Malbec. The grape came from south-west France in the 19th century and found a second home in Mendoza's dry, sunny climate. Planted in 2000, the vines grow at around 1,000 metres at the foot of the Andes, where strong daytime sun is balanced by cool nights that keep the fruit fresh. Yields are held to 4,000 kg per hectare, and only about 5,000 bottles are made each year.
Hand-picked, hand-sorted grapes are fermented with selected yeasts at 25–30 °C, go through malolactic fermentation and spend 20 months in French oak barrels.
