De dónde viene
Agrelo lies within Luján de Cuyo, the wine district just south of the city of Mendoza. Mendoza is Argentina's main wine province and the place where Malbec became the country's signature grape. Here the vines sit at 1,000 metres at the foot of the Andes: strong sun by day and cool nights help the grapes hold on to their acidity. Bodega Caelum planted this Fiano in 2009 on clay with stones, trains it on trellises and picks by hand. Around 4,000 bottles are made each year under winemaker Juan Ubaldini. The winery takes its name from a small constellation of the southern sky that depicts a sculptor's chisel – a nod to the idea that, for them, the hands are the real tool of the trade.
Gently pressed whole grapes, juice settled for 48 hours at 10 °C without enzymes, fermented in French oak at 18–20 °C with malolactic fermentation blocked, then 12 months in 500-litre French oak barrels with regular lees stirring.
