De dónde viene
Staphyle is a Mendoza winery, and Iris is the young, fresh side of its range: varietal wines meant to be drunk while their fruit is at its liveliest. The name is a tribute to the water and the sky of Mendoza. That is less poetic than it sounds. Mendoza lies at the foot of the Andes and is essentially a desert; vineyards exist there only because snowmelt from the mountains is channelled into irrigation, and clear skies with intense sunshine shape the growing season. The province made its name with Malbec, but its wineries work with white grapes too. With this Chardonnay, Staphyle is after freshness and flavour rather than weight, and the winery itself encourages adventurous food pairings.
