De dónde viene
Staphyle farms in Agrelo, part of Luján de Cuyo just south of the city of Mendoza and one of the province's traditional wine districts. This is foothill country below the Andes, where vineyards cannot do without irrigation – here it is drip-fed. Malbec originally comes from south-west France, but in Mendoza it found conditions that suited it so well it became Argentina's signature grape. Rosé shows its lighter side. For this wine from the Vástago de Gea line, fruit from 25-year-old, vertically trained vines stays on its skins for only 18 hours at a very low temperature – enough for colour and red-fruit aromas without the tannin of a red. The result is a rosé built on freshness rather than weight.
Harvested into 18 kg crates and sorted before destemming, 18 hours of skin contact at 5 °C, then the separated juice fermented at 16 °C with selected yeasts.
Servicio
Serve well chilled at 6–8 °C.
