Tasting notes

Staphyle publishes no tasting notes for this wine. What we know of the making – a 23-day fermentation in stainless steel at 16 °C, no oak mentioned, 12.5% alcohol – points to a white built on freshness and the grape's fragrance rather than weight, with a light to medium body and a clean finish.

Pairs with

  • Grilled chicken or pork tenderloin with lemon and herbs
  • Argentine empanadas
  • Ceviche and raw fish
  • Spicy Asian dishes such as Thai curry
  • Fresh goat's cheese

Where it comes from

Torrontés is the white grape Argentina calls its own: it arose in the country and is rarely planted anywhere else. Staphyle grows it in Agrelo, a district of Luján de Cuyo just south of the city of Mendoza and one of the oldest wine areas in the foothills of the Andes. Mendoza is essentially a desert, so vines depend on irrigation; here it is drip irrigation, which lets the grower decide how much water each plant receives. The vines are around 25 years old, trained on vertical trellises and yielding about 8 tonnes per hectare. Harvest came in early March – late summer in the southern hemisphere – into small 18 kg crates so the grapes reach the cellar intact. A slow, cool fermentation in stainless steel is meant to keep the variety's perfume and freshness.

Harvested in early March into 18 kg crates and fermented for 23 days in stainless steel tanks at 16 °C.
